Sure, the Unarmored Sorcerer can eventually get enough Dexterity Boosts to catch up, but the Sentinel Sorcerer doesn t have to spend any boosts on AC.

In Pathfinder 2e, your armor is generally dictated by your class. Even feats that can give you heavier armor, like Armor Proficiency, do not scale beyond Trained.
